Culinary School moves towards sustainability

LaSalle College Vancouver's Culinary School has partnered with Ocean Wise in efforts to reduce our overall ecological footprint and make a move towards a more sustainable future.

One of the main changes that were brought with this initiative is the featuring of sustainable local seafood in our student-run bistro menus and in the culinary classrooms. LCV's chef instructors and students now will build their menus based on recommendations from Ocean Wise, which highlight sustainable seafood recommendations and products to avoid due to overfishing or unsustainable harvesting practices.

The school is also significantly reducing plastic usage and waste within the Culinary program and the Bistro by eliminating plastic cutlery and packaging. New compostable, biodegradable and recyclable take-out packaging and storage containers are now being used wherever possible.
